"Mardi Gras" means "Fat Tuesday." I have never really celebrated this holdiay/event before. I don't really think going out on "Fat Tuesday" in college to have a few drinks or going to the establishment in Tempe, AZ named "Fat Tuesday" counts.
This year though, I have a can of biscuits in my fridge and I am going to make Beignets. This is a cheat recipe, but what the heck!
A Beignet (pronounced ben-yay) is a French fritter: a Louisiana style fried donut or fritter covered in powdered sugar that almost every Cajun child grew up eating and was made popular worldwide at the Café de Monde restaurant in the New Orleans French Quarter. Originally a rectangular puff of fried dough sprinkled with powdered sugar, the term can also refer to fritters or crullers containing fish or seafood.

Beignets

1 can refrigerated biscuits
2 cups oil
1/4 cup powdered sugar
Preparation
1. Heat oil in skillet over medium high heat.
2. Cut each biscuit in half.
3. Slice a 1 inch slit in the center to make a typical beignet shape.
4. When oil is hot, fry about 6 beignets at a time. Turn often so they do not burn, but turn a golden brown.
5. Remove from oil and drain beignets on a paper towel.
6. Place on serving plate and dust with powdered sugar.
