Baked Gnocchi with Broccoli

Oh my yummy! This was delicious. My Apron Strings all gave it TWO thumbs up...the youngest gave it THREE thumbs up. This dish was easy...easy...easy. We were rushing out of the house to catch a movie, so it was eaten on the run. If we were sitting down to dinner, like we do most nights, then I would have served it with a tasty salad and some crusty bread.

    Prep time: 20-25 minutes
    Cooking time: 10-20 minutes
    Servings: 6 (made 5 perfect servings for us! )


    Ingredients
    2 packages of Gnocchi (from refrigerator section)
    13 oz tomato sauce (1/2 jar of your favorite)
    ½ cup feta (crumbled)
    ½ cup shredded mozzarella cheese (can also use sharp cheddar cheese)
    3 cups broccoli


    Directions
    Cook Gnocchi according to directions on package (it is done when it all swims/climbs to the surface of the water)
    Steam broccoli then puree
    Heat tomato sauce

    Mix Gnocchi, pureed broccoli, tomato sauce and feta cheese
    Put mixture in a 9x13 baking dish
    Top with shredded cheese

    Bake at 350 for 10 minutes or until bubbly
    Broil for a few minutes to brown the cheese, if desired


    Serve with a salad, crusty bread and a glass of red wine.
